Wanting to greet your kids after school with quick and easy snacks?  I just created Cookies ‘n Cream Chocolate Pie Cups made with Kraft Cool Whip and Jell-O Chocolate Pudding that is exactly that.

Last week, I needed to do some shopping for birthday parties and back to school, so I headed up to Walmart to get what I needed.  While I was there, I figured I would also look for afternoon treats for the kids.

As I shopped around, I happened upon the perfect shade of lipstick, located presents in the toy area for weekend parties, and paid a visit to the snack isle.

I saw one of my kid’s favorite kind of cookies so I grabbed a package, and then made my way over to the baking isle where I found a wide variety of Jell-O Pudding Mixes.

I had been brainstorming snack ideas, and decided I could incorporate the cookies and pudding into some sort of pie.

Of course pie wouldn’t be right without Cool Whip, so I added a tub from the freezer section to the cart and also picked up cherries from another isle to go on top.

Having this combination of items worked out great because I printed a $1.00 off Coupon for Cool Whip and 2 any size Jell-O Pudding Mixes (While supplies last) before I left home.  I was happy to put it to good use.

After this I was finished shopping, so I checked out and headed home.

The next day, I was ready to give my Cookies ‘n Cream Chocolate Pie Cups a trial run. To get started I first took 14 of those favorite cookies and put them into the food processor.  This made cookies n’ cream crumbs.

I then added 2 tablespoons of those crumbs to 8 clear containers and packed the contents down with the back of the scoop, this was the pie crust. Any left over cookie crumbs were put into a sealed plastic bag to be used later as a topping.

Next, I prepared a 5.9 oz Box Jell-O Chocolate Instant Pudding for “pie filling” by adding 2 1/2 cups of milk to the mix and stirring with a whisk for 2 minutes.

I poured this mixture over the top of the cookie crumbs and filled each container up about half way. These were then placed into the fridge for an hour.

When the cups were ready, I pulled out a few and added 2 heaping tablespoons of Cool Whip to the top. After that, I sprinkled the left over cookies crumbs, and added a cherry on top.

This was then handed over to my son the “official taste tester”. Looking for another after school treat? Check out my Animal Cracker Parfait Recipe.

As you can tell by the photos my son enjoyed the snack, and he announced to me, “THAT was SO GOOD!”. The next day he asked if he could have it after lunch, and I said “Sure!”.

I think these are a good portion for a snack, and they are definitely convenient to prepare since they were all ready in the fridge.

What simple snacks recipes do you create for after school? Which dishes do you use Cool Whip in?

I am really looking forward to making Cookies ‘n Cream Chocolate Pie Cups, and greeting my kids with special snacks and warm hugs after school!

I'm on the pickier side so I would not enjoy chocolate pudding at all but these however still look delicious and easy to make! I'm sure I can probably whip these up for a few friends and my siblings. Thanks for sharing! :)

Those look really good! I have some of those favorite cookies in my apartment right now--and I almost always have the ind serve sugar free chocolate pudding--and I do have fat free whipped cream. Maybe I will take the pudding out of the cups--then add crushed cookies-put the pudding back-add whipped cream-add more cookie crumbs--all I don't have are the cherries! Thank you for this great idea.

This is just the kind of snack I've been looking for to spoil the kids on the first day back to school (when they get home). Pinning it.

Oh yum, that looks soo good. I like that you made the recipe for individual cups, they're easier to manage and less clean up too.

That looks so easy and yummy! I use Cool Whip mainly for fruit salads, but sometimes in various desserts, too!

I just love Jello pudding and keep the individual serving cups in the frig for those late night snacks. I love the idea of Cool Whip as the topping as well. Man, is my mind ever turning with new recipes. Thanks for the cool recipe and planting the seed for more pudding and cool whip recipes.
