I love it when I can find multiple uses for a product, and I recently did that very thing when I made Gluten Free Chocolate Peanut Butter Cookies.

Gluten Free Chocolate Peanut Butter Cookies

Now I say multiple uses, because I can also eat the star ingredient of this recipe in a bowl with milk or as a dry snack.

Honey Bunches of Oats Chocolate Cereal is a new product that not only has nine essential vitamins and minerals, but is also the first gluten free variety within the Honey Bunches of Oats family.

Honey Bunches of Oats Chocolate Cereal

This heart healthy option has no high fructose corn syrup and is only 130 Calories per serving. In addition, it tastes great and has an excellent texture with crunchy granola bunches as well as crispy honey and chocolate flakes. 

Plus if you grind it into a fine powder, it makes an excellent base for Gluten Free Cookies.

So back to those awesome Chocolate Peanut Butter Cookies! As you can see by the photo above they look YUMMY, and they are super EASY to make.

Please read on for the recipe details and directions.

Gluten Free Chocolate Peanut Butter Cookies Ingredients

Gluten Free Chocolate Peanut Butter Cookies Recipe Makes 18-20

Ingredients:

1 & 3/4 Cups of Honey Bunches of Oats Chocolate Cereal

1/2 Cup of Sugar

1 Cup Creamy Peanut Butter

1 Large Egg

1/2 Cup of Mini Chocolate Chips

Honey Bunches of Oats Chocolate Cereal Ground up

Directions:

First preheat the oven to 350 Degrees F.  Then use a food processor to grind the Honey Bunches of Oats Chocolate Cereal into a fine powder. (This will yield about a 1/2 cup when finished).

Next, hand mix the ground cereal, sugar, peanut butter, and egg in a bowl. This will make pretty thick dough. Then, add in the chocolate chips until completely combined.

On a cookie sheet with parchment paper, scoop around 2 tablespoons of dough for each cookie. I rounded these as I placed them 2 inches apart. To finish, bake for 13-15 minutes and cool on a wire rack.

    I haven't tried it. With two GF kids, I normally avoid the cereal aisle, but it's great to know there's a gluten free variety now. Using it as the basis for cookie mix is brilliant! My favorite Honey Bunches variety is the one with almonds.

    I haven't tried new Honey Bunches of Oats Chocolate Cereal. My favorite Honey Bunches of Oats cereals are Honey Bunches of Oats with Pecan Bunches and Honey Bunches of Oats Fruit Blends - Peach Raspberry.

    I haven't tried the chocolate flavor but am happy to see they use real cocoa for flavoring. I've tried other "chocolate" flavored cereals that taste fake. My favorite is Honey Bunches of Oats with almonds.

    I have not tried the chocolate flavor myself, but am certain the grandchildren would like it. The only one I actually eat is the variety with strawberries, but the rest of the family goes for any of the varieties.
