Bacon Chicken Salad Stuffed Tomatoes! Plus Check Out The Tomato Monster!

Bacon Chicken Salad Tomato Monster

If you like to make food interesting for your family, then you will want to check out my Bacon Chicken Salad Stuffed Tomatoes.

Plus to take it up a notch further, I even turned them into Tomato Monsters for Halloween. To recreate this dish, read on for more details below.
Ingredients for Bacon Chicken Salad Tomato Monsters

Bacon Chicken Salad Stuffed Tomatoes Serves 5

Ingredients for Chicken Salad:

12.5 ounce Canned of White Chicken

2 Pieces of Crumbled Bacon

1/3 Cup of Green Onions

2 Tbsp of Mayonnaise

Plus 5 small to medium size tomatoes

Coring a tomato

Directions:

First drain the chicken, then cook and once cooled crumble the bacon. Combine these with the chopped green onions and Mayonnaise. Then, refrigerate.

Then cut off the very top of the tomatoes and core out the seeds and center. Set aside the tops. (As not to waste, I then used the seeds and center in a rice dish for dinner)

Tomato Bowls

From there, scoop 2-3 tablespoons of Chicken Salad into each tomato. These are then ready to eat.

If you want to create Tomato Monsters, simply cut a cucumber in half long wise and slice it into small pieces.

Bacon Chicken Salad Stuffed Tomatoes

Then cut teeth out of the slice. Next position the teeth on the Chicken Salad and add 2 Manzanilla olives for eyes.

To finish, place the tomato top above at an angle.
