You may recall that last November, I shared that I was attending the Mom’s Meet WOWSummit. One of the sponsors of the event was a company called Zevia. Through this relationship, they provided me with free product coupons to pick up their no sugar zero calorie soda. Opinions expressed about the drink are that of my own.
Since I am always looking for ways to repurpose foods I thought that the Zevia Ginger Root Beer would work as an excellent substitute in a cake that my mother in law makes. So after testing it out, I created a delicious Root Beer Cake Recipe. My kids have raved about this cake so much that I am actually made another one this week.

Root Beer Cake Recipe
Ingredients:
1 1/2 Cups of Salted Sweet Cream Butter
2 Cups of Granulated Sugar
5 Eggs
3 Cups of All Purpose Flour
2 Tsps of Cinnamon
1 Cup of Root Beer
Directions:
Preheat the oven to 325 degrees.
Cream sugar and butter together – beat until light and fluffy. (I suggest letting the butter soften before you try to blend, 15 seconds in the microwave will work)
Then, add eggs one at a time and beat well. Next add the flour.
Beat in 2 Tsps of Cinnamon and 1 cup of settled (bubbles are down) Root Beer.
Pour into a well-greased and floured bundt pan.
Bake at 325 degrees for 1 hour and 15 minutes or until a toothpick inserted near center comes out clean. Cool thoroughly.
If I can describe the taste, I would say it tastes like a Snicker Doodle Pound Cake. My kids describe it as delicious!
