Black Olive and Garlic Hummus Recipe With Pompeian Extra Virgin Olive Oil!

I was provided a Pompeian Extra Virgin Olive Oil Pack to facilitate this post through the Smiley360 Blogger Circle. Opinions expressed are that of my own.

Black Olive and Garlic Hummus Recipe

I have been wanting to create hummus from scratch for a very long time.

Leading up to creating this recipe, I had researched the ingredients by talking to fellow moms and reading labels. Of course since I had mentioned it to my kids, they had been asking me when I was going to make it for them. I had the chickpeas sitting in the pantry and had already picked up Tahini few weeks ago but for some reason I just thought it was going to be difficult and put it off.

In the meantime Smiley360 had contacted me asking if I would be interested in putting together a dish with Pompeian Extra Virgin Olive Oil. Well the timing could not have been any better. I decided to finally take the plunge and last week picked up some diced garlic, and my daughter and I created hummus at home. FYI, the initial investment in the Tahini and the minced garlic may be a little pricey, however they will get plenty of use over time.

Ingredients:

1 can of low sodium Chickpeas AKA Garbanzo Beans

2 tbsps of Pompeian Extra Virgin Olive Oil

1 tsp of Tahini

1 1/2 tsp of Minced Garlic

1/4 tsp of salt

1/4 cup of chopped Black Olives

Directions:

Puree Chickpeas in a blender with 2 tbsps of Pompeian Extra Virgin Olive Oil. (You could also do this in a food processor or mash them by hand.) Move this to a bowl and add 1 tsp of Tahini, 1 1/2 tsp of Minced Garlic, 1/4 tsp of salt, 1/4 cup of chopped black olives. Stir and combine completely. Serve on crackers, with veggies, or as a spread on a sandwich.

Now that I know how easy it is to make hummus, we will be doing it more often. I just regret that I have not made this sooner. My kids thought it was really good, and my daughter asked for seconds. Both kids even took it for snack at school the next day.

Do you make Hummus at home? If so, what ingredients do you include?

I have never made hummus at home but that looks so easy! I pick up big bottles of minced garlic at costco. It's a lot cheaper.

I've never been a big fan of Hummus but I think I would like it with the black olives and seasoned with olive oil. I definitely have to try this one.
