Apple Chop Banana Muffins

I get tired of making the same old banana bread, and like to mix things up a bit. Since I have put applesauce in my recipe before, I thought chunks of apple would also taste great. In addition, I learned that Greek yogurt could be used in the place of shortening, so I also incorporated that into this recipe.

She was very focused on counting the muffins. 馃檪

My daughter and I were having a mother/daughter day, so this was an activity that we could do together. She got the muffin cups ready while I pulled the ingredients, and she ran the mixer while I tossed in the recipe parts. We had a blast, and this is聽how we did it!

Chopped Apple Banana Muffins Recipe

Makes 12 muffins

Ingredients:

1 Mashed Banana
2 Chopped Apples (around 2 cups)
1/2 cup of Greek Yogurt
1 cup of Sugar
2 Eggs
1 1/4 cup of White Flour
3/4 tsp of Cinnamon
2 1/2 tsp of Baking Powder
1/2 tsp of Salt

Directions:

Preheat the oven to 350 degrees.

Peel the skin from the apples and chop them up into small pieces. 聽Mash the banana.

Using a beater, cream the yogurt and sugar until fluffy. Add the eggs one at a time, beating well. Mix in the rest of the ingredients, adding the apples and bananas last.

Pour this in the cupcake holders making sure apples go into each. Bake at 350 degrees for 25 -30 minutes, or until the center is firm. I cooked mine in stoneware containers, so the time may vary based on your bake ware. I checked mine with a tooth pick before I pulled them out.

I really like this combination of fruit, and I like the taste of the cooked apple.

The kids gobbled up these muffins and my daughter said to me, “MMM I like the pieces of apple!”. 聽This also happened to be the day before Labor Day so I took a few over to the celebration, and my in-laws got to enjoy them as well.

    What a cute little kitchen helper you have! The muffins look yummy. Apple season is nearly here so I'll have to bookmark this recipe to try. As for banana bread, we love the traditional version, but often use pecans instead of walnuts.

    That is wonderful that you have a little kitchen helper. :) Those muffins certainly look tasty. I like bananas and apples so I am sure I would love this combo.

    This is an extravaganza of flavor! Now if I could just find a cute helper like yours to make the experience of making these more fun. :) My kids loved to help me in the kitchen too.
