This past week, they were having a Teacher Appreciation Lunch in the theme of a Luau at my son’s school, and I was kind of at a loss of what to make. I remembered having a Watermelon and Pineapple Salsa at a House Party Event, and thought this would be something fun and tropical for the teachers to enjoy.
I went to Allrecipes.com and found a recipe for Watermelon Salsa but as I usually do, I like to experiment and make things my own so I amended the recipe for my tastes. CLICK HERE–>Watermelon Salsa to see the original recipe.
Here is what I used in my Watermelon and Pineapple Salsa Recipe:
3 cups of Chopped Seedless Watermelon, small pieces
1 20oz can of Crushed Pineapple Drained (Drain it Well!)
1 Large Vildalia Onion Chopped into Small pieces
1/2 cup of fresh chopped Cilantro
1/4 cup of Orange Juice
1 tsp of Hot Sauce
FYI, I picked up Blue Corn Tortilla Chips and Yellow Corn Tortilla Chips to serve with it.
Directions are below:
First I washed and chopped the Cilantro and placed it in the bowl.
I then drained and placed the pineapple in with the cilantro. I added the Orange juice to this mixture.
Next, I chopped the onions and added this to the bowl.
Finally, I chopped up the Watermelon and mixed all the ingredients together including the hot sauce.
After it was all mixed up, I took the left over Watermelon and thinly sliced the edges and used this to line the bowl to give it decoration. I placed it in the refrigerator and kept it refrigerated until it was ready to serve.
I think it turned out great for my first try! If you make it, let me know what you think.
