A friend of mine makes the best potato salad with Bacon and Egg and even though I don’t have the recipe, I remembered what it looked like and thought I would take a swing at making it for the Super Bowl.
This would also work great for picnics, birthday parties and baby or bridal showers. I am serving this to 7 people, but it would probably be enough for 10. And, you can double or triple the recipe for a larger crowd.
Bacon and Egg Potato Salad
Here is what you need:
5 Medium to Large Idaho Potatoes
2 Boiled Eggs chopped into small pieces
2 Slices of Bacon Cooked and Crumbled
3 Heaping Tablespoons of Mayonnaise
Pepper or Salt to taste
Seasoning Salt on top for decoration
Directions:
Prepare the Eggs and Bacon before you boil potatoes and place in the frig.
Cut the potatoes into 1 inch cubes, place into boiling water and boil for 10 minutes. Remove from heat, drain, wash with cool water and place into a serving bowl. Chill this serving bowl for 2 hours or until cool. Once cooled add the chopped egg, crumbled bacon, and mayonnaise. Mix Lightly as not to smash the potatoes. Then add pepper or salt to your preferred taste, and lightly sprinkle seasoning salt on top for decoration.
(Personally I would not add any salt, but we don’t use a lot of salt normally, so you may need to in order to suit your taste)
This is a delicious version of potato salad and extremely easy to prepare.
