I wanted to make chocolate chip cookies the other day, but I did not have a full bag of chips to complete the recipe. So, I improvised and threw in some chopped up caramels, chopped pecans, and chocolate chips. I also used a recipe for White Whole Wheat Chocolate Chip Cookies from Gold Medal Flour.The cookies turned out awesome. (Here is a similar recipe with regular flour Ultimate Chocolate Chip Cookies)
However, I needed to fix the recipe a little, and in the meantime, I discovered that there is a similar cookie name for these called Turtles. So, here is the final recipe and it is actually made with Caramel Bits.
Pecan, Caramel, and Chocolate Chip Cookie Recipe AKA Turtles.
Makes 3 Dozen
Ingredients:
3/4 cup packed light brown sugar
1 cup butter or margarine, softened/ almost totally melted
1 teaspoon vanilla
1 egg
2 cups White Whole Wheat Flour (If you use ALL PURPOSE flour, I suggest adjusting the baking time to 10 minutes)
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup of chopped pecans
1/2 package (6 ounces) milk chocolate chips
1/2 package of caramel bits (around 6 ounces)

Directions:
Preheat the oven to 375 degrees. Combine sugars, butter, vanilla and egg in one bowl with a mixer.
Combine flour, baking soda, salt, chips, and nuts in another bowl stir with a spoon.
Slowly add the mix with the flour to the mix with the sugars and egg and combine with the mixer. The dough will be very firm.
Scoop out dough with a Trigger-style cookie scoop (or rounded tablespoon in a ball), and space about 2 inches apart on a non stick surface or parchment paper.
Cook for 8 minutes (make sure you remove immediately from the oven otherwise the caramel will burn). Allow cookies to cool a few moments before you remove from the pan.
