Pasta salad is not only a great recipe for meal sides, but it also makes an excellent dish for family get togethers and picnics.
We obviously haven’t been doing too many gatherings lately, but I am hopeful that I will get to share this Pesto Pasta Salad With Carrots, Romaine, and Parmesan with a large group in the future.

Now the reason why this pesto pasta salad came together, was because I was given an opportunity to review Barilla Creamy Genovese Pesto through Moms Meet.
I am actually a big fan of pesto and have enjoyed it on bread, fish, as well as in warm pasta dishes.

I had been contemplating making a fresh pesto dish for dinner but time escaped me to actually do it since we are busy again with school and after school activities.
Needless to say, I didn’t have an excuse any longer because Barilla Creamy Genovese Pesto has made putting together a weeknight dish super simple.

Created with 100% Italian Basil, 100% Italian Cheeses, and imported from Parma, Italy, this pesto sauce is delicious.

A 6.2 ounce jar of Barilla Creamy Genovese Pesto can be added to 16 ounces of cooked pasta warm or cold to make a flavorful meal.

Pesto Pasta Salad With Carrots, Romaine, and Parmesan Recipe
Serves 8 or more
Ingredients:
6.2 ounce jar of Barilla Creamy Genovese Pesto
16 oz of Cooked Pasta
2 Cups of Chopped Carrots
2 Cups of Chopped Romaine
3 Tbsp of Shredded Parmesan

Directions:
Combine the Barilla Creamy Genovese Pesto into the cooked pasta and then add in the vegetables. Once mixed, sprinkle the cheese on top and refrigerate until ready to eat.
Now since this was an experiment, I had more than I needed and we ended up eating this over a few days. The romaine and carrots stayed crisp and it kept its flavor.

FYI, you can always adjust down the measurements for this recipe and make half a box of pasta, use half a jar of pesto, half the veggies, and half the cheese. However, be sure to refrigerate your left over pesto.
