A special thank you goes out to Paramount Home Entertainment for sending our family a copy of Butterbean’s Cafe Let’s Get Cooking DVD. We were excited to watch the episodes and my daughter and I really enjoyed making the Crustless Quiche together.
Now long story short, last summer my daughter and I got introduced to the series Butterbean’s Cafe.

In fact we liked the episodes and recipes included in their DVD so much, that we ended up making Apple Donuts as well as Butterfly Recipe Cards.
When we had an opportunity to review another DVD, I was excited to see what kinds of food ideas would be included.
I especially like that this show gets children interested in meal preparation as well as encourages making good choices in situations as well as in food choices.

Since we have been stuck at home for the past week, I have been looking for meal ideas to utilize what we have on hand as well as provide good balance between proteins and fresh produce.
When I saw the card for Crustless Quiche, I just knew that was the one my daughter and I would have to try.

FYI to get the original recipe with additional ideas as well as other recipes included in the DVD such as Peanut Butter and Jelly Bites, Rainbow Chia Pudding, and Veggie Pizza, purchase the DVD at Butterbean’s Cafe Let’s Get Cooking DVD.
If you would like to recreate our version of the Crustless Quiche Recipe, you will need the following (Makes 12 Muffins):

7 Medium Eggs (Original recipe called for 6 large)
2 Cups of Chopped Veggies (We used 1 cup of Chopped Baby Spinach, 1/2 Cup of Chopped Cherry Tomatoes, and a 1/2 Cup of Chopped Mushrooms)
3/4 Cup of Shredded Sharp Cheddar
1/3 Cup of Sour Cream
1/4 Cup of Milk
1 Tsp of dried Italian Seasoning Mixture (Basil, Oregano, Parsley)
1/2 Tsp of Salt
Non-stick Cooking Spray
Muffin tins

Tip: We made half the Crustless Quiche Recipe as spinach and mushrooms, and the other half tomato, spinach, and mushrooms.
Directions:
If you are making this with a child, have an adult preheat the oven to 350 degrees as well as chop the vegetables.

Next, mix the eggs, milk, sour cream, spice, and salt with a whisk until fluffy. My daughter handled this responsibility.
FYI, the original recipe called to spray the cooking spray into a Silicone Muffin tin. I have stoneware and it worked as well. If you have metal, you may want to use baking cups.

Then, distribute the veggies and the cheese evenly into the muffin sections.
Next, evenly pour the egg mixture over each muffin section. I then took a spoon and patted down each section to make sure it was completely covered with the mixture.

The muffin tins were then placed into the oven for 30 minutes. FYI, these should be cooked until the edges of the muffins are golden brown and the center is firm.
I then removed Crustless Quiche Recipe from the oven and allowed them to cool down. We then served these warm with a garden salad with ginger dressing and tater tots.
