As you know from time to time, I will do product reviews and share my findings. Recently I received free Eggplant Parmesan with Rotini Pasta Skillet Meal Kit from Dominex, and it definitely came in handy for an EASY Italian Dinner Night.
During the summer, if I can stay away from spending lots of time in a warm kitchen I am all for it. I probably avoid creating in depth dishes just because I don’t want to get hot and I am busy taking care of 3 kiddos.
Well when I saw that I could create a delicious meal like Eggplant Parmesan, in less than 15 minutes, needless to say I was excited try it out.
Now to take advantage of this EASY Eggplant Parmesan with Rotini Pasta dinner option, I first had to visit my local Walmart and look for Dominex Products in the freezer section.

It just so happened that we had a perfect opportunity this past week to try out this meal kit. My oldest son and hubby headed off to a ball game, which left me with a total of 3 to make dinner for. Of course I wanted to keep it simple and with a couple sides this serving size of 2.5 was just the right amount for us.
While the Eggplant Parmesan with Rotini Pasta Skillet Meal Kit was heating up on the stove, I cut up Hoagie Rolls and topped them with butter and garlic powder. I then sliced Cantaloupe so I could then wrap the pieces in Prosciutto.
This Skillet Meal Kit is created by adding the frozen contents to a pan with a tablespoon of olive oil, cooking on medium high, while covering and stirring occasionally. It is prepared in 8-9 minutes and ready in around 12.
Once I finished making the Eggplant Parmesan with Rotini Pasta Skillet Meal Kit, I added shaved Parmesan to the top and then placed my garlic bread under the broiler until it was lightly toasted.
Dinner was then ready to serve, and tasted WONDERFUL. It was so nice to prepare this flavorful meal in such a short period of time.
