Easy Blueberry Waffles Recipe!

Fresh Blueberries

Blueberries are fun to eat whether added into a dish or simply eaten by the handful. 1 Cup of this delicious fruit is only 80 calories and also contains 3.6 grams of fiber per serving. Plus, thanks to growing seasons around the world, Blueberries are now available year round.

I want to start off the New Year right by making better food choices for my family, and one of the best ways to do this is through purchasing fresh produce.

Ingredients for Blueberry Waffles

On a recent trip to the store, I picked up a couple of boxes of Blueberries. After fighting off my kids (who simply wanted to snack on them all), I incorporated them into an easy recipe and had breakfast for dinner.

Easy Blueberry Waffles Makes Approximately 5

Ingredients:

– 1/2 Cup of Fresh Blueberries

– 1 Egg

– 1 Cup of  Flour

– 3/4 Cup of Milk

– 2 Tablespoons of Sugar

– 4 Tablespoons of Olive Oil

– 3 Teaspoons of Baking Powder

– 1/2 Teaspoon of Cinnamon

– 1/4 Teaspoon of Salt

Blueberry Waffle Ingredients

Directions:

Preheat your waffle maker. Then, puree the blueberries in a blender.


Next, beat the egg and then combine all the ingredients completely with a spoon.

Blueberry Waffle Mix

Prepare the batter in your waffle maker until cooked.

They are that simple to make and require no syrup, plus you can garnish with even more fresh blueberries!

    My son LOVES blueberries. We always pick enough each season to last us an entire year. His favorite thing to do is eat them directly from the freezer.

    Blueberry waffles are my wife's favorites. For me, I end up buying the frozen kind as fresh always gums up our waffle maker.

    Other than just eating blueberries alone--because they are amazing by themselves--I also love to incorporate them in my daily nutriblast smoothies because they add so much good flavor, antioxidants, and fiber. They really are a SUPER food!

    I'm not a fan of cinnamon so substituted vanilla and came out nicely.
