I enjoy making homemade breads and muffins for my family with “better for you” ingredients like fresh fruit and yogurt. We also love the taste and texture of granola, so this past week I decided to make a delicious treat and surprise them all with a dozen Apple Banana Crunch Muffins.
Of course before I could get started baking, I first needed to pick up a few ingredients. I took a trip up to Walmart and there I shopped for bananas, yogurt, sugar, and then headed over to the cereal isle. While browsing, I found a variety of Quaker® Cereal.
There was Quaker® Life, Quaker® Oatmeal Squares, Quaker® Real Medleys®, and Quaker® Simply Granola. I have sampled a couple of these, and they are a great addition to breakfast as well as a convenient and delicious snack.
Since I happen to be on the hunt for granola for my muffins, I grabbed a box of Quaker® Simply Granola Oats Honey & Almonds. Check out how I made my recipe below.
Apple Banana Crunch Muffins – Makes 12
Ingredients:
Quaker® Simply Granola Oats Honey & Almonds
1 Mashed Banana
1 Cup of Unsweetened Applesauce
1/4 Cup of Vanilla Lowfat Yogurt
1 Cup of Sugar
2 Eggs
1 1/4 cup of White Flour
1 tsp of Cinnamon
2 1/2 tsp of Baking Powder
1/2 tsp of Salt
Directions:
Preheat the oven to 350 degrees.
Using a beater, completely mix the yogurt, applesauce, and sugar until completely combined. Then, add the eggs one at a time, beating well.
Mix in the rest of the ingredients, adding the banana last. Pour this into muffin cups in a pan.
Then, place 1 heaping tablespoon of granola on top of each muffin lightly patting it down.
Bake at 350 degrees for 30 minutes, or until the centers are firm.
Let me just say that the smell coming out of my oven was amazing and they tasted just as good.

Since I made these muffins while the kids were at school, I brought them along in the car as an afternoon snack. They really enjoyed the treat, and told me how good it was!
