 Spicy Roasted Corn and Black Bean Salad! #TexasPete A Perfect Taco Night Side! #Ad

The next time you are a bit stuck on what to serve along side your main course on Mexican Night, simply pull this easy recipe together created with Texas Pete Hot Sauce Sriracha CHA.

If you would like to recreate the Spicy Roasted Corn and Black Bean Salad Recipe, this is what you will need:

YIELD: 2 quarts

PORTION (Serving Size): 2 ounces

INGREDIENTS:

• Salad

• Corn, canned, drained well: 4 cans

• Olive oil: 3 Tbsp.

• Salt and pepper to taste

• Black beans: canned, rinsed and drained well: 4 cans

• Red onion: minced: ½

• Roasted red bell pepper: small diced: 2 cups

• Cilantro: fresh, rough chopped: 1 bunch

• Scallions: sliced thin on a bias: 1 bunch

DRESSING:

• Red wine vinegar: ¼ cup

• Lemon juice : fresh squeezed: 1

• Dijon mustard: 1 tsp.

• Olive or vegetable oil for salad dressing: ½ cup

• CHA! by Texas Pete®: 4 Tbsp.

• Cumin: 1 tsp.

• Chili powder: 1 tsp.

• Salt and pepper to taste

PREPARATION:

Turn on the oven broiler. Drain the corn well and place it in a mixing bowl. Toss the corn with the olive oil and season with salt and pepper. Place the corn in an oven-safe dish and place under the broiler for approximately 5 minutes or until the corn has lightly charred. Place the corn in the refrigerator to chill. Once the corn is cold, place it in a large mixing bowl. Add the black beans, minced red onion, roasted red bell peppers, cilantro, and scallions. Combine well. Place all ingredients for the salad dressing into a blender and puree until smooth. Pour the dressing over the corn and black bean salad and mix well. Season the salad with salt and pepper and keep refrigerated until ready to use.

In my opinion, this Spicy Roasted Corn and Black Bean Salad would also be a perfect topping for fajitas or a taco salad. Plus, I think it would also make a pretty addition to a family picnic or holiday gathering.

    Thanks for this recipe! I think I would add this sauce to chili, I always seem to pour like 5 different hot sauces in my crockpot when I'm making up a chili to add different dimensions to the flavor.

    What a delicious looking salad. I haven't tried the Texas Pete’s Sriracha Cha Hot Sauce yet, but I would probably add this to some Carne Asada tacos.

    I love this recipe. It'd be a hit for football on Sundays for sure! I didn't realize that Texas Pete had a Sriracha sauce. Awesome!

    This sounds delicious. Unfortunately, while I love spicy things, they do not like me very much, so this hot sauce would be very bad for me. This sounds similar to the McDonald's Southwest chicken salad though, and the dressing they use for that is one that has a little kick but doesn't give me heartburn. I love it. I make a mean chicken salad at home too. I realize your recipe does not include chicken, but it would be an excellent addition.
