I can’t stand to let food go to waste, so when I have some really ripe bananas, I grab the ingredients and make a loaf of Banana Bread. I made some last night, and it turned out delicious as usual. We are actually having it as our breakfast this morning, but it is yummy anytime of the day.
My husband is not a fan of nuts, so he likes this recipe. However the nuts can always be added in.
I originally got this recipe from my friend Michelle G, but as usual I modified it to make it my own through years of adding different ingredients. Don’t ask me about the calories because I’m sure it has a few, but that is probably why it tastes so good.
Here is the Recipe… Easy Nut Free Banana Bread:
Ingredients:
2 Ripe Bananas Mashed
1/2 cup of Vegetable Shortening (You can substitute in a 1/4 cup of Applesauce and 1/4 cup of Olive Oil together in the place of the Shortening)
1 cup of Sugar
2 Eggs
1 1/4 cup of White Whole Wheat Flour
3/4 tsp of Cinnamon
2 1/2 tsp of Baking Powder
1/2 tsp of Salt
Powdered Sugar
Directions:
Preheat the oven to 350 degrees. Using a beater, cream shortening and sugar until fluffy. Add eggs one at a time, beating well. Stir in the rest of the ingredients, adding the bananas last. Pour into a loaf pan. Bake at 350 degrees for 45 minutes or until center is firm. When it cools, sprinkle powdered sugar on top and cut to your desired size.
As you can tell, it is a hit with the kiddos!
