It was a little cool out the other day, and it put me in the mood for Potato Soup. As always, I decided to use what I had on hand, so I put together an EASY Recipe for Red Potato Soup. I even threw in some Green Onion from my garden.
This is a hearty soup that could be served as a side or as a meal. If it is any indication of how good it turned out, my 5-year-old daughter asked for seconds. I ended up eating it 2 days in a row.
If you would like to recreate this dish, here is the recipe and directions:
Red Potato Soup Recipe
Estimate, Serves 5-6 as a side. Serves 3-4 as a meal.
5 cups of chopped Red Potatoes (Skin left on)
1/4 Cup of Diced Green Onion
1 /4 Tsp of Garlic Powder
1/2 Tsp of Salt
1/8 Tsp of Pepper
1 Cup of Milk
1 1/2 Cups of Water
Optional: Shredded Sharp Cheddar
Directions:
First chop up the Red Potatoes and put them on to boil for 30 minutes. Dice the Green Onion while waiting.
Then, drain the potatoes and mash. I just used a hand masher and left it a little chunky.
Next, add the garlic, salt, pepper, milk, water, and Green Onion.
Combine and cook on Medium for 5 to 10 minutes stirring occasionally (watch to avoid burning). Then move to a low setting, continuing to stir occasionally for 20 minutes.
While waiting, shred the sharp cheddar. When the soup is ready, serve plain or top with cheese.
The soup turned out yummy, and is so simple to make. I love that it has all kinds of great texture.
