Needless to say, the last few weeks in March 2020 have been interesting here and everywhere in the world. I have found myself looking to my fridge and pantry trying to use what I have on hand versus having to head out to the store.

This action has evolved into me making a Strawberry Yogurt Banana Bread Recipe!
Before I had my youngest child, I used to bake a Yogurt Banana Bread Recipe all the time.
I couldn’t stand to let ripe bananas go to waste. I had experimented with replacing shortening with applesauce and yogurt and found that I preferred the alternative.

However with the exception of the holidays, our crazy schedule hadn’t allowed me the opportunity to do much baking. To my disappointment I had to discard many a ripe banana.
Of course now my children and I have found ourselves gifted with lots of time, and I have been thinking about all the activities I complained about never having the opportunity to do in the past.

This is where lots of baking and cooking has come in. So far we have made a crustless quiche, homemade meatballs, and have been making my Yogurt Banana Bread.

Like I mentioned before I had to be a little more creative and use what I had on hand, so I ended up using a 6 oz container of Strawberry Yogurt in the place of plain vanilla yogurt.
Now I will tell you, that it changes the taste just a little (for the better) and you can see specks of the Strawberry in the Bread. If you would like to recreate this Strawberry Yogurt Banana Bread Recipe, details are below.

What you will need:
6 oz of Strawberry Yogurt or 3/4 cup of Yogurt
2 Ripe Bananas
1 1/4 Cup of Flour
1 Cup of Sugar
2 Eggs
2 1/2 Tsp of Baking Powder
1/2 Tsp of Salt
Nonstick Cooking Spray
Medium Bowl
Mixer

Directions:
Preheat the oven to 350 Degrees. Then combine the yogurt, sugar, and eggs with a mixer on low until completely combined.
Next, add the Baking Powder, Salt, and slowly add in the flour until a batter is made. Then, mash the bananas and completely mix them in with the mixer.

Next, spray the Loaf Pan with the nonstick spray and pour the Strawberry Yogurt Banana Bread Recipe mixture into the pan.
Tip: Slightly tap the pan on the counter to remove any bubbles.

Finally, cook this in the oven for at least 50 minutes to an hour.
You will know it is ready when the edges are browned and the center is firm.

FYI the edges will be a darker brown because of the nonstick spray, however it doesn’t effect the taste.

Once cooled, my family had a piece and it turned out to be a thick and delicious Banana Bread.
I am now in the process of making another batch but this time with Blueberry Yogurt.
