The kiddos just started the second month of school, and between grocery shopping, cleaning, cooking, homework, and then running around to after school activities, I wonder where my days have gone. Regardless of how quickly time passes, I still have to manage to get it all completed.
I am definitely on the hunt for short cuts to make the work easier. One of those responsibilities that I have tried to simplify is making lunches for my children.

Utilizing Leftovers:
Make the next day prep easier by repurposing last night’s dinner. I usually make a little extra because not only is this cost effective, but it ensures food doesn’t go to waste. Examples of leftovers my kiddos like to find in their lunches are spaghetti, pizza, Beef Stroganoff, salad as well as hamburgers or pulled pork sandwiches.
Stick To The Basics:
There is nothing wrong with traditional lunches and my kids are happy to eat a Turkey and cheese, or PB and J sandwich. Of course they can be mixed up with substituting in tortillas or crackers in the place of regular bread. I am sure to also keep plenty of baby carrots, celery, as well as grapes and apples on hand to fill in their meals.
Keep It Simple With Prepackaged Foods:
Not only are these easy to throw into a box, but prepackaged foods like String Cheese, Granola Bars, Chip Mixes, and Raisins are preferred by my kids. In addition, they are huge fans of Entenmann’s Little Bites. These mini muffins are lunchbox ready and stay fresh until the kids are ready for their snack or lunch. (When my kids see these in the house, it doesn’t take long before they are asking if they can have a bag).
Find Common Tastes:
My children have their preferences, but I don’t have time to make 3 different meals for picky eaters. My go to dishes that they all like are macaroni and cheese, minestrone soup, as well as chicken salad sandwiches. In addition, I also invested in cooler style reusable water bottles since they now prefer to drink water.
Use Breakfast Foods:
It is fun to mix things up, and I was surprised at how my kids took to having Avocado Toast in their lunch. In addition, they enjoy a bagel with cream cheese as well as a boiled egg.
