Cream of Mushroom Meatloaf

If you are looking for a simple Meatloaf Recipe, here is one that I made this past week.  It was a hit with my family (including my son), and I hardly had any leftovers. It serves around 4-6.

Cream of Mushroom Meatloaf Ingredients

All you need to create the Cream of Mushroom Meatloaf Recipe is:

1  pound of Lean Ground Beef*

1/2 Cup of Plain Breadcrumbs

1 Egg

1 Can of Cream of Mushroom Soup

* FYI if it is a little over a pound of meat that is fine, however I would not go less than a pound. I have used both Lean and Ground Round for this recipe, and after some reader input it looks like a leaner ground beef with less fat works better versus a 80/20 ground beef.

Cream of Mushroom Meatloaf Ingredients

To prepare:

Preheat the oven to 350 degrees. Combine the egg, breadcrumbs, ground beef, and half a can of Cream of Mushroom Soup.  I first used a spoon, and then I put my fingers in to make sure it was mixed up really well. I then formed this into a loaf and placed it into my loaf pan.

I poured the other half of the Cream of Mushroom Soup on top of this and smoothed it out over the top.  I cooked this in the oven for 1 hour. (You may need to cook it for as long as 1 hour and15 minutes.) As always, follow the USDA Guidelines for Cooked Meat.

This Cream of Mushroom Meatloaf Recipe was easy to prepare and I paired this with Parmesan Broccoli and White Rice. It was yummy!

      Bonnie, I have never tried it before with Turkey. If you use Turkey in other meat loaves, I would adjust your time on this recipe accordingly. I think it would taste good, and add moisture to the meat. Maybe I will have experiment with it next. If you try it out, let me know how it is. Carlee

      I have made this several times with turkey and it is awesome!! I have to admit I mostly use turkey instead of beef but by far this is better than most turkey meatloaf recipes also!!!

    Tried your easy recipe. I had the ingredients at home and didn't have to run to the grocery store. I added French's French fried Onions on the top for the last 5 minutes....delicious.

      I would think the French Fried Onions would be good inside the meatloaf also.

    My grandmother and mother made this loaf but with onion soup mix added. I add Worcestershire sauce and use oatmeal instead of bread crumbs. I mix 2 pounds of ground beef, use the whole can of soup in the mix (none on top), and make 2 loaves. Wrap and freeze one for baking later.

      I 've done the same as you since my daughter was about 5 (39 now) as she wouldn't eat regular meatloaf...in fact I made it for dinner tonight for her & her family...love this recipe!

    I put thinly sliced green onions inside and used glutenfree dried stuffing mix finely ground! Like the idea of dried onions on top because i had them on hand! This is cooking in oven now. Ill put those crispy dried onions on top! Sounds good! We will see!😊

    I've made a similar recipe for years. I use vegetable flavored crackers instead of bread crumbs, I also add wylers beef boulion crystals(1 tsp), diced mushrooms (4 oz) and 1 small diced onion or 1 TBSP minced dried onion. Everyone that's had it, raves about it. I also use all ingredients but the soup to make grilled burgers with, which are also a hit.

    I hate catsup based meatloaf. I don't know why, I've just never liked it, it's either got to be gravy based or made with the cream of mushroom soup. I created a similar recipe years ago. I use cream of mushroom soup, then about half of a sleeve of savory crackers. Personally I like veggie flavored crackers, but any kind will work, as long as they have a lot of flavor to them. I add about 1/2 cup of fresh mushrooms, and 1/2 cup of fresh chopped onions or about 1 to 2 TBSP of minced onion. I then add about 1/2 TBSP of beef boulion crystals, optional to add the following, about 1/2 tsp of minced garlic, 1/4 tsp each of Marjoram, Thyme, and Cumin. I use this recipe without the soup for grilled burgers and get rave reviews for them!

    Mmmm......that meatloaf looks super delicious. I never thought of using cream of mushroom soup. I will definitely be making this. Thank you for the recipe.

    I haven't made meatloaf in so long, and this looks like such a good recipe that is easy to make. I have never used cream of mushroom soup in meatloaf, but love the idea. I'll need to try this soon.

    This is a great recipe! I use crushed saltine crackers instead of bread crumbs, add some chopped onion and celery, and Cream of Chicken soup. Just like my Mom made❤️

    Thanks for this recipe idea. I typically always have cream of mushroom soup or similar varieties on hand. My husband loves meatloaf so I will have to try this. Your parmesan broccoli recipe looks quick and easy, too.

    Thank you for this recipe. I used to have a mushroom meatloaf recipe for the slow cooker, but it got lost when I moved. I think I prefer this anyway, using a loaf pan and the oven. I prefer oatmeal in place of crackers or bread crumbs, and add a tsp of Worcestershire sauce. I think my husband is going to like this.
