Baked Avocado Fries Recipe
Serves 4 and adapted from an Original Recipe at Produce for Kids, please visit for nutritional information.
Ingredients:
2 Mexican Hass avocados, sliced ½-inch thick
1/2 Cup of Orange Juice (Original recipe calls for 1 lemon, juiced 1 lime, juiced)
1 cup panko bread crumbs
1/2 teaspoon salt, divided
1/2 teaspoon lemon pepper seasoning, divided
2 tablespoons lowfat Ranch dip
Olive Oil
Directions:
Preheat oven to 425°F.
Put Orange Juice in a small bowl. Mix bread crumbs, ¼ tsp. salt and ¼ tsp. lemon pepper in separate bowl.
Dip avocados into juice, season with ¼ tsp. salt and ¼ tsp. lemon pepper, and press into bread crumbs.
Coat baking sheet with olive oil (original recipe called for cooking spray), lay avocados single layer and bake 12-15 minutes, or until golden brown. Served with ranch dressing for dipping.
