To get ready for this years “BIG GAME” El Monterey, a company known for Frozen Mexican Food, sent my family packages of Taquitos and also asked me to create recipe pairings inspired by the flavors here on Frugal and Fun Mom.
The products we sampled were Southwest Chicken Taquitos, Jalapeno Ranch Shell Shockers Taquitos, Cheesy Pepper Jack Taquitos, Taco Seasoned Beef and Cheese Taquitos, and the Nacho Cheese Shell Shockers Taquitos.
El Monterey Taquitos alone have an amazing flavor. They have a little spice to keep things interesting, plus they also offer flavored shells to give each their Taquitos some variety in taste.
Since the level of spiciness was different with each Taquito, I decided to make Mild Salsa, Mango Salsa, and Guacamole. Not only did these dips taste great, but they complimented the flavors and offset some of the heat.
The Mango Salsa and the Guacamole recipes really stuck out to me, and I want to share them below so you can also give them a try.
Mango Salsa
Serves Approximately 4-6
1 Mango
1 tsp of Lemon Juice
1/4 cup of Finely Chopped Sweet Italian Red Onion
2 tbsp of Fresh Cilantro
Directions:
Chop the Mango and Onion into very small pieces and then add chopped Cilantro and Lemon Juice. Stir to combine and serve.
The Mango Salsa pairs well with the Southwest Chicken Taquitos, Jalapeno Ranch Shell Shockers Taquitos, and Cheesy Pepper Jack Taquitos.
Guacamole
Serves Approximately 4-6
1 Ripe Avocado
1 tsp of Lemon Juice
1 Seeded Medium Tomato Chopped
1 tbsp of Cilantro
1/8 tsp of Salt
1/8 tsp of Garlic Powder
1/4 cup of Chopped Sweet Italian Red Onion
Directions:
Mash the Avocado and stir in the Lemon Juice. Add the Salt and Garlic Powder, then stir. Finally chop the Onion and seeded Tomato into very small pieces and then add the chopped Cilantro. Stir to combine and serve.
The Guacamole pairs well with Taco Seasoned Beef and Cheese Taquitos and the Nacho Cheese Shell Shockers Taquitos.
Once I finished making the dips, I placed them in the refrigerator and preheated the oven. I placed each variety of El Monterey Taquitos on metal baking sheets and put them in from 13-15 minutes. (Heating and time vary for Taquito products)
They were so simple to prepare, I just pulled them out and let them cool for a few minutes before serving. Between the recipes and the Taquitos, my house smelled amazing!
To make our dinner festive, the table was arranged with Homemade Football Centerpieces. Also, earlier in the week I had picked up football platters along with bowls for the dips.
To compliment our main dishes, I added fruit with chocolate, veggies, and tortilla chips.
Just as the playoff game was showing and I told hubby and the kids that dinner was ready. I put out dishes and napkins, and we all dug in.
We sat around and watched the game as a family and enjoyed our meal together. It was a relaxing evening with easy to prepare dishes.
It is really hard to say if I have one particular favorite El Monterey Taquito, but I do like the batter on the Southwest Chicken Taquitos and the flavor is amazing on the outside of the Jalapeno Ranch Shell Shockers.
My husband sampled and ate a couple of each, and I am pretty sure that the kids were big fans of the Taco Seasoned Beef and Cheese Taquitos.
I could tell my daughter was enjoying the Taquitos because she looked at me and said, “Yum Yum, these are GOOD!” and proceeded to fill her plate up with a second helping.
