My kiddos are pretty good about eating their fruit and veggies, but if I can sneak in a couple more then I consider it a win!
I did that recently when I headed to my local Publix to purchase baking supplies as well as Michigan Apples to make an Apple Cinnamon Banana Muffins Recipe. FYI, my children absolutely love these muffins.
Plus, I am happy to say that my purchase is supporting an initiative to help raise funds for Feeding America.
Produce for Kids and Publix Super Markets have teamed up to raise funds for local Feeding America member food banks. This campaign is in its 16th year and is celebrating more than 3.6 million meals* donated to families in need and more than $546,000 for Feeding America programs that benefit families and children in Publix market areas.
This Publix Produce for Kids campaign, which will run through Oct. 24, is supported by six participating fresh fruit and vegetable companies including Avocados From Mexico, CrunchPak®, Del Monte® Foods, Little Bear®, Marie’s® and Michigan Apples.
*Every $1 donated to Feeding America helps secure at least 10 meals on behalf of member food banks.
Publix customers can find signage in store about this initiative and are encouraged to support these brands by eating additional fruits and vegetables. Apple Cinnamon Banana Muffins Recipe – Makes 12
Ingredients:
2 Chopped Michigan Grown Gala Apples
1 Ripe Banana
1 Cup of Vanilla Lowfat Yogurt
1/2 Cup of Sugar
2 Eggs
1 1/4 cup of White Flour
1 tsp of Cinnamon
2 1/2 tsp of Baking Powder
1/2 tsp of Salt
Directions:
Preheat the oven to 350 degrees.
Using a beater, completely mix the yogurt, and sugar until completely combined.
Then, add the eggs one at a time, beating well.
Next mix in the rest of the ingredients, adding the banana last.
Then, chop up the apples to around 3/4 inch pieces and fold these into the batter.
Pour the mix into the muffin pans and bake at 350 degrees for 35 minutes, or until the centers are firm.
Carefully remove the muffins from the pans and allow to cool on a baking rack.
I just made another batch, because my kids have been eating these Apple Cinnamon Banana Muffins as a snack and for breakfast.
