Shrimp and Mandarin Orange Wrap With Citrus Vinaigrette!

While on vacation in St. Augustine last month, I had a Salad with Shrimp and Mandarin Oranges and have been craving that combination ever since.

After brain storming a little, I decided to create a recipe with an Asian flavor and those star ingredients.

Not to mention I am all about making dinners easier along with kid friendly, so I incorporated them into a wrap.

Now thanks to my new AWESOME Rubbermaid BRILLIANCE food storage set, I was able to meal prep and have fresh ingredients ready to make my Wraps and a Homemade Citrus Vinaigrette.

The best part was, I was able to take it easy and assemble these on Mother’s Day while my family played out at the pool.

Tip: I prepped as much as I could in advance. I chopped up a head of romaine lettuce and stored it in my large BRILLIANCE container. I also made the Shrimp by sauteing 40 pieces in 2 Tbsp of butter on medium. I did this according to the packaging for 4-6 minutes until cooked through (all pink) and then stored them in the fridge until ready to serve.

If you would like to recreate this recipe, the details are below!

Homemade Citrus Vinaigrette

Ingredients:

2 Tbsp Low Sodium Soy Sauce

2 Tbsp White Wine Vinegar

2 Tbsp Extra Virgin Olive Oil

6 Tbsp Mandarin Orange Juice

Directions:

Place the ingredients in a small Rubbermaid BRILLIANCE container and seal. (you know it is closed due to the suction of the top and the latches.)

Chill the dressing in the fridge, and before serving, shake to combine.

Shrimp and Mandarin Orange Wrap

Ingredients:

Extra Large Flour Tortilla

5-7 Cooked Medium Shrimp

5-7 Mandarin Orange Slices

2 Tsp of Crumbled Low Fat Feta

2 Tsp of Homemade Citrus Vinaigrette

2 Tbsp of Chow Mein pieces

1 Cup (about a handful) of chopped Romaine Lettuce

Directions:

First place the lettuce on the Flour Tortilla, then add the Shrimp, Feta, Mandarin Oranges, Chow Mein Noodles, and then top with Homemade Citrus Vinaigrette. To finish, close the wrap and cut in half.

As you can see, this is easy to assemble and it has an amazing color and texture.

    Your wraps look delicious!!! I like to use homemade hummus in wraps--sort of as both an ingredient and dressing. Hummus goes so well with things like turkey breast and and almost any veggie.

    Wow, the wraps you prepared look so good and refreshing. Perfect for the hot,humid weather here in Georgia! I like to prepare teriyaki chicken breast and shred the chicken. I then put the shredded chicken in my wraps with avocado, bean sprouts and a little homemade ginger dressing that I have found off of YouTube!

    I make a really good italian herb dressing that goes over well here. We like just about anything as a wrap. Fried thin slices of eggplant with a little fresh mozzarella and italian dressing is awesome.

    I use low carb wraps! I love them. I put tuna salad, grilled chicken, etc..my favorite is Ham, swiss,lettuce and tomatoes, and I mix mayo with spicy brown mustard for the spread!

    I don't eat any kind of dressings, I just do not like them. I do make a good wrap with turkey breast (the kind you cook yourself, not the lunchmeat variety, sweet potatoes and sauerkraut drained. Sometimes I will add some corn for crunch. It is really good.

    I don't make any homemade dressings although I can make a good copy-cat version of Chick-fil-a's Special Sauce. I like to put grilled chicken, lettuce, tomato, and cheese on a wrap. I also love doing avocado slices, tomato, and chicken.

    Our wraps are pretty standard, dijon mustard, turkey, lettuce, tomato and cheese. As for dressings, very often it is ranch dressing.

    I grilled chicken and then make a mixture of the following as a dressing to go with the wrap: Sour cream, lemon juice, minced garlic, parmesan, pepper and milk.
