Couscous Salad Recipe! Easy to Make, and Is An Awesome Side Dish!

I am a huge fan of Couscous, and I use it in salads and in the place of rice all the time. It makes an awesome side dish, and here is an example of a Couscous Salad I made last night for dinner.

1 box of Couscous, cook ahead and chilled
1 large Tomato chopped
1 large Cucumber chopped
1 small Yellow Onion chopped

Place this back in the frig and keep cool until ready to serve.

It is that easy!  Hope you enjoy the Couscous Salad, and if you try it, let me know what you think.

I do something like this using Orzo instead of the Couscous, only because my hubby for some reason doesn't like couscous ...... sometimes men are so strange :)

What I like is that you can change up the veggies or dressing and have a totally different flavors in this side dish so it doesn't get "boring"

Thanks for reminding me - I'll be whipping up one of these sides for our graduation meals.
