Do you celebrate Taco Tuesday? If so, I have an easy Corn, Tomato, and Avocado Salsa recipe to either add as a topping to your dishes or as a side to scoop up with tortilla chips.

Being a Florida girl, I am definitely spoiled when it comes to the beaches and natural resources. However, I am also fortunate to have access to fresh fruits and vegetables not only at my local grocery store, but right down the road at my local farmer’s market.
In fact, recently I was able to pick up Fresh from Florida Tomatoes, Bell Pepper, and Red Onion to add to a Homemade Corn, Tomato, and Avocado Salsa Recipe!
Not only did I enjoy snacking on this colorful combination at lunch time, but in the evening I added this on top of chicken to make a flavorful taco for my family.
If you would like to recreate this easy salsa, details are below! This recipe was adapted from the Fresh from Florida Florida Corn, Tomato, and Avocado Salsa Recipe.
Corn, Tomato, and Avocado Salsa Recipe
Serving Suggestion 4
Ingredients:
2 large Florida tomatoes, diced
1/2 cup Florida red onion, chopped fine
1/2 cup Florida bell pepper, chopped fine
1 large avocado, peeled, seeded and diced
1/4 cup fresh cilantro, hand torn
1 – 15.25 oz can of yellow corn
2 tablespoons of lime juice
1 teaspoon powdered cumin
Directions:
To get started, first drain the corn and then add to a large bowl. Next add 2 tbsps of lime juice.
Then, chopped up the avocado and stir into the corn.
Next dice the Fresh from Florida tomato, and chopped up the bell pepper and red onion and mix into the bowl.
Then, tear the cilantro and add the tsp of powered cumin.
Finally, completely combine by stirring the mix. The recipe is then ready to serve alongside tortilla chips.
Store any extra in the fridge, and for freshness I suggest using by the next day.
FYI, the original Corn, Tomato, and Avocado Salsa Recipe called for 4 ears of roasted Florida corn, however I substituted in canned due to lack of availability. I will be sure to add it in the future as I come across fresh at the store or farmer’s market.
Tip: If you want to make this recipe spicier, feel free to add your favorite hot sauce. Plus, you can always salt or pepper to taste.
