Greek Pasta Salad Recipe!

disclosure-for-site

January 18, 2017 Carlee at Fun Learning Life 5 Comments

Over the holidays and for a recent Moms Night In, I created a Greek Pasta Salad Recipe.

Now I am sure that there are other versions of this, but I had been to a restaurant a while back and really enjoyed having Feta Cheese and Artichoke Hearts in the mix.

To make my own creation at home I altered a pasta salad I already make, and added in those 2 ingredients. It is so good!

Let me just say that I am craving this again as I write and already have a request to create it for an upcoming Baby Shower.

Of course the best part is how easy it is to make.

Frankly, the most difficult part is waiting for the pasta to cool and cutting up the Olives and the Artichoke Hearts.

In reality, I could purchase the olives already chopped up in the future. If you would like to see how simple this is to make, details are below!

Greek Pasta Salad Recipe (I estimate as a side to serve 7-10)

Ingredients:

1 – 12 oz Box of Tri- Color Rotini Pasta

1 – 8.5 oz Can of Quartered Artichoke Hearts

1 – 6oz Can of Large Pitted Olives

1 – 8 oz Bottle of Italian Dressing

1 – 4 oz Container of Feta Cheese

Directions:

First prepare you tri-color pasta in advance according to the box and allow to completely cool.

Then, add in the entire bottle of Italian Dressing.

Chop up the Olives into 3rds as well as the Artichoke Hearts and add these to the pasta as well as mix.

Finally stir in the Feta Cheese and refrigerate until ready to serve.

This went over so well for my gatherings and has an excellent flavor.

Not sure how long leftovers would last in the fridge because I finished them up in a couple days.

What do you add to your Greek Pasta Salad?  I would love to hear your thoughts!

I hope you enjoy this recipe just as much as I do!
