I made this for dinner one evening paired with Meatloaf, and my kiddos went CRAZY over it. They are huge fans of Avocados and they also love the contrast of Red Onions. If you would like to recreate this dish, the details are below.
Avocado and Bacon Potato Salad Recipe, serves approximately 10.
Here is what you need:
4-5 Medium to Large Russet Potatoes (around 6 cups)
2 Ripe Hass Avocados (around 2 Cups)
3 Slices of Bacon Cooked and Crumbled
1/2 Cup of Small Chopped Red Onions
4 Tablespoons of Mayonnaise
Optional, but highly recommended 1/4 tsp of Salt
Directions:
Cut the potatoes into 1 inch cubes, place into boiling water and boil for 10 minutes. Remove from heat, drain, and cool in the refrigerator.
Once the potatoes are cooled, cut up the onions and cut up the Avocado into small pieces.
To finish add the Bacon, Avocados, Onions, Mayonnaise, and Salt to the Potatoes.
Mix lightly as not to smash the potatoes or avocados. Then refrigerate until ready to serve.
