Now that the holidays are over and the kids are back at school, it is time to snag a few “Me Moments”. I actually did this the other day by making myself an amazing smelling Mint Chocolate Chip Coffee Cake and enjoying it alongside a cup of coffee and the morning paper.
This recipe is really easy to create but before I could even start indulging, I first had to make a trip up to Walmart to get the necessary ingredients. The key to pulling this baked dessert together is Müller® Ice Cream Inspired Yogurt, and I found it over in the dairy area.
In the yogurt section I found the NEW Müller® labeled black packages in a couple of varieties including Raspberry Chocolate Chip, Mint Chocolate Chip and Vanilla Bean.
They all sounded really good, so I decided to grab a few containers to test out.
I sampled each of the Müller® Ice Cream Inspired Yogurt varieties, and I like the flavor, texture and the pieces of either vanilla bean or chocolate. These would make a perfect afternoon snack, breakfast addition, or a YUMMY dessert.
Not to mention can be added into a decadent Coffee Cake.
Mint Chocolate Chip Coffee Cake Recipe
Ingredients:
2 Containers of Mint Chocolate Chip Yogurt 5.3 oz
1 cup of White Sugar
2 Eggs
1 1/4 cup of White Flour
2 1/2 tsp of Baking Powder
1/2 tsp of Salt
Directions:
Preheat the oven to 350 degrees.
Using a beater, completely mix the yogurt and the sugars until completely combined. Add the eggs one at a time, beating well. Mix in the rest of the ingredients.
Pour this into a greased loaf pan. Bake at 350 degrees for 55 minutes, or until the center is firm.
This coffee cake is that easy to prepare and once it cools a bit, feel free to slice a piece and ENJOY!
