I was looking to do something fun with the kiddos for a snack or meal time, so I thought “Why not combine 2 of their favorite things, Macaroni and Cheese and Goldfish Crackers“. So after a little brainstorming, I did exactly that and created my own version of Macaroni and Cheese Muffins.
Before I could start to create my dish, I took a trip up to the store to gather a few ingredients. I happen to make my Mac and Cheese from scratch, so I needed sour cream, shredded cheddar, and of course would need the Goldfish crackers.
I went to my local Walmart and found Goldfish crackers located on a special Rollback display near the snack area. I was excited by the value since the 30 oz cartons were priced at $5.98. After checking out the selection, I grabbed a box of the Colors and purchased the rest of the items I needed as well.
Now of course when I walk into my house with a huge box of these my kids are asking when they can have a snack. I was happy to share since I knew I would have plenty left over to use in my recipe.
Macaroni and Cheese Muffins Recipe Makes 12
Ingredients:
Macaroni and Cheese based on 1 Cup of Dried Noodles (Don’t have a recipe? See mine below)
1 egg
Shredded Sharp Cheddar
Directions in 2 Steps:
1st Step
Preheat the oven to 350 degrees. Then prepare the Macaroni and Cheese Recipe.
Easy and Cheesy – Macaroni and Cheese Recipe
Ingredients:
1 Cup of Uncooked Elbow Pasta
2 Slices of American Cheese
4 Tablespoons of Sour Cream
1 Cup of Shredded Sharp Cheddar Cheese
3 Tablespoons of Margarine
Cook the pasta according to the directions and drain the water. Put the pot back onto the warm burner with the pasta. Immediately add all of the ingredients and stir. Do this until the Cheeses and Margarine are melted and the pasta is completely covered.
2nd Step
Let the prepared Macaroni and Cheese cool down. (I placed mine in the refrigerator covered for around 10 minutes.)
After it is has cooled, beat 1 egg and combine it together. Spoon this into 12 spots on a nonstick muffin pan/ pans. Then add a layer of Goldfish Crackers and top that with a light layer of Shredded Sharp Cheddar.
Place this in the 350 degree preheated oven for 30 minutes. When the muffins are completely firm, slide a spoon around the edges and scoop them out.
Serve warm or cold.

Not only have my kids eaten this fun and tasty dish for snack and dinner, but they also took it to school for lunch. I knew I did good when my daughter was showing off her lunch, and the teacher came over to tell me how neat it was.
