Did you know that Americans consume twice the recommended amount of sodium?
WE DO according to The Dietary Guidelines for Americans, and I think it is pretty alarming. There have been evenings where my fingers were swollen, and I am left with a great thirst after a highly salted meal. It can be rough on the body and I don’t like it for my family or myself.
Sunkist in partnership with a Master Chef at Johnson and Wales University, has created a Sunkist S’alternative blend that reduces sodium in recipes up to 75%.*
To support this great alternative, I was asked to reduce sodium in one of my family’s meals. I did exactly that, and it was easier than I thought.
I went to my local Winn-Dixie and picked up a Bag of Sunkist Lemons along with Salmon, Asparagus, Dried Cranberries, and Rice. With these I created a dinner without added salt for my family of 5.
To prepare the Salmon, first I preheated the oven to 350 Degrees. Then I squeezed half a Sunkist Lemon on top of the 1 pound of fish, followed with lightly sprinkling dried dill over the top. I cooked this for 20 minutes until done. It turned out delicious.
Next, to prepare the Asparagus, I took another half lemon and squeezed it over the top of 15-20 stalks. I then lightly sprinkled black pepper over it. I also added it to the preheated oven at 350 degrees and cooked it for 20 minutes.
It had a tart flavor to it, but I liked the combination with the Asparagus Flavor. Next time I would try the Sunkist S’alternative blend for vegetables since I think my kids would probably appreciate the dish more.

Finally, I made my Cranberry Rice Recipe.
To recreate this dish, you will need:
– 1 cup of White Rice, after prepared this will yield 3 cups. (Consider adding a Tbsp of Olive Oil while cooking to help the rice from sticking.)
– Half a Sunkist Lemon
– 1/2 Cup of Dried Cranberries
– 1/4 Cup of Diced Green Onions
To prepare the mixture, I squeezed half a lemon over the rice and stirred. Next, I added the Dried Cranberries, and diced Green Onions. I then combined these all together. The dish is sweet and the onion gives it a great burst of flavor.

This dinner was that easy to prepare, and I felt great about giving my family less sodium. I will definitely be incorporating the Sunkist S’alternative into more meals.
