If you are looking for a salad that incorporates veggies, fruit, cheese, meat, and nuts, this Spinach and Apple Salad will do just that.
I recently picked up baby spinach on sale at Publix and knew that I wanted to make some sort of salad, and figured I would use what I had on hand.
There is no perfect formula for this, so you can add as much as you like especially if you like one ingredient better than the other. You can also double the ingredients for a full bag. We happen to serve this as a side salad.
Here is what I used:
1/2 a bag of prerinsed baby spinach
1 chopped apple
1/4 cup of chopped pecans
2 heaping tablespoons of feta cheese
2 pieces of cooked bacon crumbled
3 tops full of Apple Cider Vinegar
2 Tablespoons of Olive Oil.
I then combined all of these ingredients. FYI, if you have someone who does not like pecans (as in my hubby’s case) you can set those aside and top the salad with it after the fact. Serves 3 to 4.
My daughter likes feta cheese so she was fine with this salad, however my son would have preferred it without it. I thought it was delicious.
