Thanks to Del Monte, I was sent a Gift Pack with Southwestern-Style Petite Cut Diced Tomatoes so that I could try out the product in Game Day type recipes. One of the dishes I prepared was a Guacamole Dip with Del Monte Petite Cut Diced Tomatoes with Chipotle Chilies.
This is what I needed to create the recipe:
1 Can of Del Monte Petite Cut Diced Tomatoes with Chipotle Chilies
2 Ripe Haas Avocados
1 tbsp of Chopped Cilantro
Directions:
Peel, pull out the seed, and mash the Avocados. Drain the Del Monte Petite Cut Diced Tomatoes with Chipotle Chilies (make sure you get out most of the liquid out) and add to the Avocados, and then add the Cilantro. Stir with a spoon until completely combined. Serve with Chips or on the side of your favorite Taco Dish.
FYI, to keep the guacamole from turning brown, sprinkle some lemon juice. Source, ehow.com
This is a fresh tasting dip, and not too spicy. My son and I enjoyed gobbling it up.
