I am a huge fan of Couscous, and I use it in salads and in the place of rice all the time. It makes an awesome side dish, and here is an example of a Couscous Salad I made last night for dinner.
Here is what you need for the Couscous Salad Recipe:
1 box of Couscous, cook ahead and chilled
1 large Tomato chopped
1 large Cucumber chopped
1 small Yellow Onion chopped
2 tbsp of Lemon Juice
3 tbsp of Olive Oil
3/4 cup of Italian Dressing
Precook your Couscous and chill in the frig, after that, add 3 tbsp of Olive Oil, 2 tbsp of Lemon Juice, and 3/4 cup of Italian Dressing. Stir.
Chop up all the veggies and add to the Couscous mixture. Combine.
Place this back in the frig and keep cool until ready to serve.

What I like is that you can change up the veggies or dressing and have a totally different flavors in this side dish so it doesn't get "boring"
